Matcha Lemonade

Bear with me on this one.

Matcha and lemon ARE THE BEST PAIRING. The earthiness of matcha against the sharp brightness of lemon? On paper, suspicious. In the glass, absolutely electric.

The acidity of the lemon cuts through the matcha in the most satisfying way and transforms it into possibly the most refreshing drink you will ever have on a warm day. This is the one people take a sip of and immediately say "wait… what is this?" Make it once and it will be on permanent rotation.

Method

  1. Sift and whisk matcha with warm water until fully dissolved. Set aside.
  2. In your glass, combine lemon juice and sweetener. Stir until the sweetener dissolves.
  3. Add ice.
  4. Pour in cold water.
  5. Pour your matcha base over the top.
  6. Stir gently and serve immediately.

A few things to note:

Sparkling vs still: Sparkling water makes this drink absolutely sing. The fizz alongside the matcha and lemon creates something genuinely special. Still water works perfectly well and makes it crisp and refreshing.

Sweetener: Simple syrup dissolves the most easily in cold drinks. Honey is gorgeous here too, but give it a proper stir to ensure it doesn't sink to the bottom.

Lemon: Freshly squeezed only. Bottled lemon juice has a processed sharpness that doesn't complement the matcha the same way.

Sweetness levels: Lemon varies in tartness, so taste as you go and adjust. This drink is meant to be bright and refreshing; don't drown the zing with too much sweetener.

This is the drink of summer. Make it immediately.
